pumpkin muffins


I made a batch of these the other day... let them cool down, ate one, fell in love and made another batch! Yuuuuuummy!

Time to prepare: maybe 20 mins total

Cooking time: 20 mins

Ingredients:
- 1 c. flour
- 1/4 c. shortening
- 1 large egg
- 2 T. milk
- 2 t. making powder
- 1/4 t. cinnamon
- 2/3 c. sugar
- 1/2 c. canned pumpkin
Preparation steps

Preheat oven to 350 degrees. Mix together flour, baking powder, salt and cinnamon. Set aside.

Cream together shortening and sugar in mixing bowl. Beat in egg. Add pumpkin and milk. Add dry ingredients. Spoon into greesed or paper lined muffin pans, filling 2/3 full.

Mix together: 1 T. flour, 2 T sugar, 1/4 t. cinnamon, and 2 t. butter to make streusel topping. Sprinkle on muffins.

Bake for 20 minutes.

these sound really good , i love pumpkin, but i`m not sure what shortening is , we must call it something different here(australia) would you know of another name for it please?

the brand name is crisco...it's like lard.  i'll look on google and see if i can find the aussie version of it!
